Shred cabbage coarsely with a knife. Shred carrot, beet, and radish with a cheese grater. Slice cucumber, then cut slices in quarters. Throw all veggies together in a big bowl, but no need to mix just yet. Add oil, vinegar, and avocado into a cup or small bowl. Add extra vinegar for a tangier salad. Smash avocado with a fork until a thick dressing results. Then add salt and pepper to taste, onion and garlic, then give it all a stir. Pour dressing on salad and mix very well, using your hands works best to get it all incorporated. Lastly, sprinkle on some walnut bits and flax seeds, and enjoy! Hope you like it!

I’m new to raw, so I threw together this salad one day with some stuff I had on hand from the farmer’s market. What resulted was a seriously delicious and tangy salad, which I ate all on my own as my dinner. However, this also would make a great side salad split into two. I hope you enjoy it as much as I did!
