Ingredients
2 young coconuts
2 pound carrots
1 apple
1 small shallot
1 clove garlic
2 tablespoon curry powder
salt and fresh black pepper to taste
1 green apple, diced small
cilantro, minced
Recipe Directions
Hack open the coconuts, put water into blender. Scoop out meat and add that to the blender and blend til creamy. Strain this liquid to get out any fibrous pieces, and return to the blender. Juice the carrots and apple. (I use the carrot pulp to make mock tuna or something else). Add this to the coconut milk along with the shallot, garlic and curry powder. Blend til smooth and creamy. Taste and add salt and pepper.
I blend the bejeezus out of this til it’s warm and frothy.
Pour into bowls, garnish with diced apple, cilantro and black pepper.

Five Stars. I substituted three stalks celery, apple cider (homemade), and coconut butter(homemade) ... I also put over fire for about minute. Best of Fast Blend and Mouth Watering ... carrot soup receipes!!
