½ cup Lentils, sprouted
1 small zucchini, shredded w/ mandolin
1 small carrot, shredded w/ mandolin
1 small serrano pepper, finely diced
1 tablespoon Curry seasoning, adjust seasoning to desired taste
1 teaspoon cayenne pepper, adjust seasoning to desired taaste
Extra virgin Olive Oil, enough to coat
celtic sea salt, to taste
2 garlic cloves, minced finely
This website describes how to sprout the lentils.
However, I sprouted mine for less than 2 days for this particular recipe. You can choose to sprout a little longer depending on your preference.
If you do not have a mandolin, finely chop your zucchini and carrots into small strips (See picture for reference).
In a large bowl, combine everything while making sure that seasonings are evenly coated throughout.
