1 cup dried apricots (soaked for 10 minutes)
1 fresh ripe pear
1 cup coconut flakes (ground into powder)
1. Combine the apricots in a food processor or a blender and keep adding a slice of pear until you reach a jam consistency.
2. When the sandwiches are done, brush the tops of them with raw honey or agave nectar.
3. For the powdery topping, I just put about a cup of coconut flakes in my coffee grinder and made it into a powder. Sprinkle over each sandwich.
These are exceptionally good! Eat right away or save for later!
The first time I made them, I set them on a plate outside in the afternoon, and they were gobbled up in no time by non-rawers! Even the birds wanted a taste :o)
For the actual sandwiches, I used a recipe on here by Nyuszi called Peanut Butter Sandwich Cookies. And wow, they turned out great! Thanks Nyuszi!
