1 cup almonds (soaked, then dried)
½ teaspoon sea salt
1 vanilla bean (scraped)
1 cup pineapple (dried)
1 cup dates (pitted)
5 tablespoons coconut (dried, shredded)
1. Mash dates, vanilla seeds, and pineapple together by hand.
2. Chop almonds. Add sea salt to them and roll into balls. If they stick to your hands too much, get your hands a little wet.
3. Roll in coconut, and they’re done!
