3 cups sliced of any of these fresh fruits, depending on what's in season:
*pineapple (march, april, may, june)
*papaya (all year)
*kiwi (november, december)
*strawberries (may, june, july)
*raspberries (june, july, august, september)
1 cup apple juice, lemonjuice, lime juice, pineapple juice, or papapya juice- whatever's most available
3 tbsp. agar flakes
1 tbsp. kuzu powder, dissolved in 1/4 cup coconut water
1/2 tsp. cinnamon
1 tsp. vanilla extract
1 *raw nutty maple pie crust

2 cups raw nuts, soaked 24 hours, then dehydrated for 1 day
3-4 tablespoons organic maple syrup
1 teaspoon pure vanilla
Place S-blade in food processor. Turn on machine and feed nuts through the chute. Process until a fine texture is reached. With machine still running, add maple syrup and vanilla mixture, one teaspoon at a time, until nuts cling together. Stop machine, remove mixture, and press into a pie plate. Fill with desired filling.
pile your sliced fruit into the crust.
heat agar flakes in juice until dissolved.
add kuzu mixture to thicken for a few seconds
add cinnamon and vanilla extract.
pour over fruit and chill til firm.
