Peel the mango with a ceramic peeler this is sharp and keeps food pure, fresh, keeps metal off of your food and it won’t wilt or oxidize. Put on a plate, Smash some raspberries in a bowl and add some really raw agave to make a sort of sauce. Cut bananas into the same width as your mango slices, you can also substitute mango with papaya too. Then roll the banana pieces with the mango slices like in the photo then top with raspberry sauce, my friend also uses dried coconut but in Gabriel Cousens MD’s book The Rainbow Green Live Cuisine he found dried coconut to have very high mycotoxins! For some reason in the fresh form it does not have it but as soon as you dry it, mycotoxins grow and thrive in it, sure you can eat it once in a while or in moderation but I don’t use it or recommend it.
Some gourmet variations is to slice watermelon, honey dew melon with a ceramic peeler and use that along with mango or papaya for different color “fruit Sushi” and for the inside instead of just banana you can use Cherimoya for the “rice” and also use papaya, kiwi, etc. for the inside to make it look more like “salmon” and “avocado” I was going to do this but my camera just broke man I have to fix it or get a new one…

My friend actually invented this FRUIT SUSHI, as you can see it is a very whimsical new twist on sushi, is colorful, fun, festive, easy and delicious. I recommend using a ceramic peeler to make more even thin slices but you can use a knife and make thicker slices but mango is very slippery and not easy to cut a ceramic peeler makes it easy and even, my friend did the photo and this recipe is in my new 5 Star Raw Spa Cuisine with Chef Bryan Au new book.

RAWCK ON wish my camera will work not sure when I can get it fixed or a new one sigh...I would love to do the above it would be really colorful and pretty thanks for the tip! :D Also I am done venting and I am sure others are towards me just wanted to say that WE ARE ALL LOVE AND A COMMUNITY JUST BE THE LOVE THAT YOU ARE!!!

rawlizard: i had "frushi" at a restaurant in chicago (http://www.orangebrunch.com/) and they did all kinds of things. it wasn't raw, but they used coconut-milk sticky rice as the base and did things like thin-sliced watermelon that looked like a salmon roll, or pieces of melons and mangoes in the middle that was like a california roll. so, this seems like the kind of recipe that could easily be modified to make use of whatever's in season where you are.

Hi cool yes this is a very fun and easy pleasy recipe! Hmmm well try papaya, watermelon, honey dew, anything that you can use a peeler or that will "wrap" will work, hmmm lets see what else, I have seen someone use avocado for the outside wrap! You can try apple maybe? Or even an orange, but you have to have really good knife skills or good ceramic peeler helps because it is very sharp and easy to peel things, metal or cheap peelers may not work, but yeah try different fruits that will hold together and see what you can come up with! Also for the inside try kiwi to make it look like the "avocado" and papaya for the "salmon" a really fun new area of food is making Faux food which is using one ingredient to look and mimic another for fun like my Faux "Bacon and Eggs" and now your Faux Sushi, so the kiwi is green like avocado but keeping in the fruit and dessert theme it is kiwi! So try to have fun and be creative, add your photos and what you come up with I would like to see it, if my darn camera did not break down I would make ALL the above and do the photos so I am trying to see how to get it fixed I am really attached to it because it was a special gift from my Sister but it is the best camera and takes the best photos I can't seem to find a camera I like but not sure if I can get it fixed!!!!

Hi rawbryan this recipe is just fantastic! I am sad though because the mango season is over and the frozen ones come cube shaped. There is any other fruit you think it may work for this intead of the mangoes??? Thank you so much!
