Yield1 large salad
Small handful Goji Berries, approx 10-15
1/8 cup approx "Just Tomatoes" dried tomatoes without salt, you can also use fresh or dried unsalted, unsulphered tomatoes
3- 4 dates, pitted
1) Place goji berries, tomatoes and dates in a small bowl and cover with warm to hot water until soft.
2) Drain and save soaking water, transfer berries, tomatoes and dates to a blender (I use a Magic Bullet since the amount is small)
3) Squeeze the juice of 1/2 a lemon into the blending container
4) Blend, adding any soak water as necessary for processing.
Pour over your salad or use as a sauce, dressing or dip

I discovered this while on a detox diet and couldn't use any type of fat, salt or seasoning.
You'll find it hard to believe there is no salt or sugar, and the screaming red-orange color adds a lot of excitement!
Note: I may never have discovered this had I not had an old bag of Goji Berries in my fridge drawer, which I'd tried some time ago and abandoned!
