Recipe Directions

1. In your food processor, process the dates & cinnamon until you get a nice mush.

2. Add the buckwheat & process. It’s personal choice how broken down you make it – you can make it completely smooth at this stage, or not break the buckwheat groats down much at all.

3. Finally, add the nuts and hemp seeds and pulse until the nuts are broken down into smallish pieces.

4. Spread onto Teflex sheets or grease proof paper, and dehydrate for 8 hours. Remove the Teflex or paper, turn the granola over, & continue dehydrating until dry (usually about 24 hours in total). Break into bite-sized pieces & store in an airtight container.

Notes:

You can increase or decrease the amount of dates to make it more or less sweet, but you’ll also make the final granola more or less chewy. I used 20 dates last time I made it, & found it too sweet for my tastes, & too chewy to really be granola – still tasted good though. (The photo is from the batch I made with too many dates – you can still see some large pieces of date in there) The cinnamon is mostly there to make the whole thing taste a little sweeter – you can also add a pinch of salt if you like, which will make it taste sweeter still.

Simple, healthy granola. Since it’s already so nut-heavy, I generally serve it with nut milk, plus a handful of raisins.

I know this sounds stupid, but what is germinated?

Not stupid at all; I should have added a note about that. Germinated is when the seed or grain has gone from its dormant state, to just beginning to grow, but before a proper sprout forms. The growth inhibitors have gone, and the vitamin & mineral content are at their highest.
