We recently acquired a small box of grapefruits. And while I have a very difficult time eating grapefruit, I have always wanted to find a way to enjoy this deliciously scented fruit. This recipe makes a wonderfully creamy drink. I actually wanted to lick the cup clean!

Ingredients
1 grapefruit
1 banana
3 teaspoons coconut oil
¼ cup coconut (shredded)
2 tablespoons agave or to taste
Water (enough to cover)
Recipe Directions
1. Peel and deseed grapefruit.
2. Blend all ingredients. Enjoy!

How do you deal with the coconut oil? little wax bits in my smoothie gross me out. warm it up first?

Oh, I'm in Florida. So, my oil is usually already liquid. You could put a cup of oil inside of a bowl of warm water for about 10 minutes, if it was still solid. I only have a problem with coconut oil if the oil hits ice. If adding ice to your smoothie, blend ice into the drink after blending the ingredients together. Another tip... I substituted almond milk for water tonight, which made it heavenly! I personally need all of the fats that I can get, because I am still breastfeeding.

This morning, I added an extra banana, used honey instead of agave, substituted water with almond milk, added a pinch of cardamom, and omitted the coconut oil. It was still divine!

MMM! Pink Grapefruits are one of my favorite fruits. I just made this, with a little olive oil instead of coconut oil, maybe not as creamy, but still a very healthy fat. Also, didn't put any sweetener, i love the taste of grapefruits as they are. Also, added some hemp seeds.

Yummy I LOVE GRAPEFRUIT!!
A "trick" to remove the bitter taste is to peel it and segment the pieces like eating an orange and then take one segment and bit of the seam at the top and then peel off the clear skin and just eat the flesh (I wish there was another way to desscribe this without using meaty terms...grossing me out...anyway)...its the skin that is bitter the fruit is sweeter..
