My super easy go to salad, usually ingredients I have around the house regularly. Tastes even better the next day!

Recipe Directions

Slice and dice all your veggies and place in a bowl. Depending on what I have around I sometimes put in some onion sprouts or hemp seeds too. Top with the lime juice, adding more or less to taste, and toss. Depending on how ripe the avocado is, it sometimes becomes a creamy dressing, sometimes stays in chunks. This salad is also good with a side of corn chips. It’s very easy to scale up in size (usually 5 times the recipe makes enough for a crowd) and therefore has become my potluck staple.

I'd love to try the onion sprouts, where do you get the seeds to sprout them?

i buy them as full sprouts from the organic section of my local grocer. they taste a little like green onions and are lovely, but i can't always find them. sorry i couldn't help more!
