Recipe Directions

In a food processor, combine all ingredients. Process, pulsing, until desired texture is achieved. Season to taste.

To make a taco: Use a romaine lettuce leaf (for a “hard shell” taco) or a collard green (for a “soft shell” taco). Add some taco stuffing “meat” and toppings (shredded carrot, scallion, chopped onion, hot sauce, shredded lettuce, etc.) Fold or roll and serve.

*I suggest these fillings, as well: sliced small mushrooms, red peppers, shredded radishes, fresh cilantro, fresh parsley, and raw tabbouleh!

When I make it, I don’t worry about making sure the walnuts are 100% dehydrated because I’m just going to mix them up with some wet ingredients, anyway! It still tastes fabulous!

I had a version of this at a raw food cafe in Cleveland. Needless to say, i copied all the ingredients and make this weekly with brazil nuts. i'll have to try it w/ walnuts.
