Take the dried beans and whiz them to a fine powder in your blender or coffee grinder.

Add enough purified water to make a nice paste a little thinner than you think you need as it will thicken a bit more.

Now just season it however your little heart desires. So many options.

I generally will add cumin, salt, a tiny bit of agave and some garlic and/or onion to it, sometimes hot peppers. Liquid smoke if you are feeling not so purist today. (anyone know of a raw way to get a smoky flavor???)

For a smoother texture you can add a bit of nut butter or tahini to it. Doesn’t take much. Keep adjusting the amount of water to your liking.

Put the whole works in a plastic baggie and toss in the dehydrator to warm.

Voila! Ready.

It would be heaven if I could have black beans again...and refried, too...sigh. I agree about the sprouting, This is definitely on my to try list!

I think I'm going to sprout the beans first, then dry them, then try it out and see how that goes. I'll need to make some raw tortillas too...

i made something like this from Juliano's book... using dry black beans, and it made my husband's and my stomach feel weird. didn't agree with us.
