Jicama is sometimes dehydrated to make a sugar substitute that is raw!! :)..i saw it in the store the other day..they cut it up and dehydrate it and then make it into a powder..it is SUPER expensive like 30 or 40 dollars for about 3/4 cup.....:)

crazy huh?

If it helps Joseegonthier, Jicama is also known as a Yam Bean :)

So are they just crispy even without dehydrating? I find it difficult to imagine exactly what they would be like :0I

they kind of look like a big, odd shaped potatoe! Where I live in Boston, they are with the veggies and ginger root!

Nope, no dehydrating needed. Easy and quick!

Do these need to be in the dehydrator for a while?

I don't know any synonyms for jicama. Here's "a picture":http://www.vegiworks.com/jicama.jpg of what you'd be looking for. I've found them at our coop and, I believe, at asian grocery stores.

I've often looked for jicama while food shopping, but can't seem to find some. This is definitely on my recipe list when I do though!

Would they by any chance have a name synonym?

I've never been much of a fan of french fries, but absolutely love these. They're crisp, spicy and refreshing.
