Creating Healthy Habits
4-5 Sweet potatoes
1 bunch of green onions (you can add less depending on your taste busds)
1/4- 1/3 cup of flour of your choice (I used millet)
enough olive oil to coat the potatoes when mixing (I used around 1/3 cup)
salt and pepper taste
A few dashes of red pepper flakes
shred your sweet potatoes
dice your green onions
Mix everything thoroughly (except for the flour)
Add the flour
Make latkes into round patties about 1/4 inch thick
Dehydrate at 115 for about 4-5 hours (time may vary...basically you want them a little moist but you want the flour and oil to crisp a bit)
It's Channukah and I really love Latkes (potato pancakes that are a Chanukah tradition) so I made up a recipe and it really satisfies the latke craving! I thought about calling them raw-tkes but that kind of sounds like a disease!
