Recipe Directions

shred your sweet potatoes

dice your green onions

Mix everything thoroughly (except for the flour)

Add the flour

Make latkes into round patties about 1/4 inch thick

Dehydrate at 115 for about 4-5 hours (time may vary...basically you want them a little moist but you want the flour and oil to crisp a bit)

Smiller450's Thoughts

It's Channukah and I really love Latkes (potato pancakes that are a Chanukah tradition) so I made up a recipe and it really satisfies the latke craving! I thought about calling them raw-tkes but that kind of sounds like a disease!

Thanks for this recipe. I'm also raw and Jewish. If there's a raw food site where there's a community of Jewish people, can someone please tell me where. Thanks again.

oops! I forgot to say that I ate these with a pine nut cream I made to substitute sour cream. And I made a version without the pepper and green onions and ate them with a homemade raw applesauce....just like the real deal!
