Recipe Directions

1. Process cashews in food processor until they are pasty in consistency.

2. Mix in all the other ingredients.

3. Place 1 tablespoon sized cookie dollops onto a dehydrator sheet.

4. Dehydrate for approximately 12 hours at 105 Fahrenheit (could also dehydrate at 115 Fahrenheit for 8-10 hours with similar results).

I am going to soak cashews and make these and post a picture on the thread kandace started! I made them once, but they spoiled in the dehydrator and now I have a brand new excalibur that won't spoil! Yes! I will of course let you know how they come out. :)

Am new to raw food and do not have a dehydrator yet. Is there an alternative to a dehydrator I can use temporarily?

Mine took 2 days in the dehydrator! After 12 hours, they were "Lemon Blobs of Goo" and they were tasty blobs of goo!

trigirl63 - lemon zest is only the outer yellow part of the peel - you can get it off with a zester or the fine side of a grater. The (raw) dehydrated coconut flakes I use are made by Wilderness Family Naturals. I got mine at the health food store, but on the bag it says you can call 1-800-945-3801 for orders or questions, and it lists their website, although I don't know if you can order there, or just get info. Their products are really good, and usually somewhat cheaper than other brands. The website is www.wildernessfamilynaturals.com

germin8: I have ordered cookies made of soaked flax seeds and pineapple. They are delicious. Also, it's the same anyway, lemon juice will digest anything it is so enzymatic. FOr the pineapple, though, I would suggest squeezing the juice out of the pineapple instead of using whole pieces of the fruit, yeah, it would just turn to a liquid after you blend it. Actually, the problem is dehydrating creamed nuts, it just spoiles while dehydrated. I've found this is only tru with cashews, strange.

M@tt, pineapple has a protein enzyme (bromelain). I have a feeling pineapple won't mix well with the protein - germinated nuts/seeds. But, do let me know if it does work! I'd actually be surprised if it did.

What happened to my comment? Anyway, these were so good. Thank you kandace for putting this recipe up. Has anyone ever tried sun-drying things like these? I don't have a dehydrator (yet) and drying them in the oven wasn't too efficient either. I live in Florida so I would think they'd dry pretty quickly in the sun if it isn't too humid.

Wow! I love the batter - I can't wait for the cookies to be done (should be midnight or so, and I'll be getting home from a dance, yummy! I had a little batter left, so I put it with fruit and posted the recipe - "Rich & Creamy Fruit Salad-Dessert" Yum!

I am going to try them with macadamia butter (ground up macadamias) since I don't have any of the really raw cashews now - I'll let you know how they turn out :)

the first time i made these, even my NONraw friends enjoyed them! thanks! :) however, the next time, I had no fresh lemons available, and used the bottled juice & no zest. Totally different taste, and they're going in the trash :(

wowweee.... these are amazing... my husband (SAD) LUV'S them... and my son who has been the hardest to feed (also DOUBLE SAD) absolutely RAVED ABOUT THEM!... i will be making this recipe to take to parties and use to introduce people to RAW... it's like a life saver having a few good recipes that make you feel like you are in the best place NOT MISSING OUT ON ANY THING!!!!

Can i ask a question if anyone can answer me or you Kandace... i made Banana Leather once and it came out tasting like Braggs.. at the same time i had some stuffed mushrooms (which had the Braggs in) dehydrating in there and when i watched an Alissa Cohen DVD she said that you could do several things at the same time... im wondering if there is exceptions to that rule?????

Can anyone Help me??????

Mine are dehydrating as I type. The dough was delicious, I ate the left over dough with sliced apples-----soooo good. Thanks for sharing, can't wait to try these in the morning.

These babies are something else. The first batch never made it to the dehydrator. The second batch was stolen off the dehydrator piece by piece every time someone walked by. I need to go buy some more cashews tomorrow so I can attempt a third, crispier batch.
