Yieldmakes approx. 10-12 cookies
Ingredients: - 2 bananas -juice of 2 lemons - vanilla extract (as much as desired) - 1 1/2 cups of dried coconut - 2 pinches of celtic sea salt - 1tbsp of maple syrup and/or agave nectar.
To Make: Put everything, except the dried coconut into the food processor. Process until thoroughly smooth. Then in a seperate bowl add the “batter” and the dried coconut. Stirtogether until mixed.
The size of each swirl should be about 1 tbsp. After the swirls have been made, mash down with a fork and in the center of each add one raisin. Put on texflex sheet in the dehydrator for 12 hrs. Then turn over and let dehydrate for 3 more hrs.
Should be moist on the inside and cruncy on the outside. Enjoy!

I know that these are really similar to the other lemon cookies, but these contain no nuts and have half the amount of fat. (easy to digest, ifhaving difficulty with nuts and seeds!)
