1 large tomato (or equivalent small tomatoes)
1/4 cup sunflower seeds (soaked and drained)
1 1/2 cups water
2 teaspoons agave, honey or date syrup
Salt and pepper, to taste
1. Throw everything in the blender and blend until smooth and warmed!
2. Taste to adjust seasonings. I like mine kind of sweet, like Campbell’s tomato soup.
3. I fill my thermos with hot water and let it sit so that it is prewarmed when I add my soup.

This soup is super quick and easy. I can easily make it in the morning and pack it for lunch, even when I am in a hurry.
I originally was going to make it tomato basil soup, but I liked it all by itself, so I left it alone.
