mmmmm!

So, first what you do is cut the eggplant into slices- as thin or thick as you'd like. I like 'em about a centimeter to a 1&1/2 centimeters thick 'cause then they're like rice cakes.

secondly, you dehydrate them. i'm not sure what temerature,because my dehydrator is a peice of crap, thermostat-less dehydrator.(thanks a lot, Wal-mart)

thirdly, wait until they are like, really dry and pretty crispy.

fourthly, put them into a bowl which has about a cup of water and a tablespoon of apple cider vinager in it. soak the eggplant 'til they get softy.

fifthly, re-dehydrate them until they get super-duper dry and crunchy like rice cakes.

sixthly and finally, EAT THEM FANTASTIC!

also, a super modification for all-dressed crackers is: after you soak 'em, sprinkle a mixture of paprika, cayenne pepper, and pepper onto your eggplanty wonderfuls. cheers!!

i think there's a slight difference, 'cause if you dehydrate then soak then dehydrate, the eggplant tends to soak up more apple cider vinegar. it's really good, either way.. haha. =)

Is there a difference in the outcome of the snack if you dehydrate, soak then dehydrate again as opposed to just soaking and dehydrating?

yeah usually when i make 'em i just soak 'em and dry 'em. i just wanted to make the process look hard and professional-ly, 'cause i'm like that. man, though, it's such a bugger that it takes so much eggplant to make so few chips! but i suppose they're fun to look at and buy anyhoo, so it's all good.

I didn't want to take the time to dehydrate them, soak them, and dehydrate again, so I just sliced, soaked and dehydrated. they are AWESOME, and went really well with some hummus, in fact, I had to go buy more eggplant so I could make more. Thank you!

Hopefully next time I am feeling more patient and will take the extra time to dehydrate, soak, and dehydrate again.

oh thank you this sounds super easy and i like the simple ingenuity of it- not too many weird questionable ingredients to filter out or replace some how. my non-raw boyfriend will probably even like them ;)
