1 mango (diced
1 avocado (diced)
1 tomato (diced)
1 lemon or lime (squeezed)
1 red onion (sliced)
1 orange (squeezed)
1 cup red and green bell pepper (diced)
3 cloves garlic (chopped or minced)
1/8 cilantro leaves (minced)
1/8 basil leaves (minced)
Pinch black pepper, chili pepper, or cayenne
Pinch sea salt (or not)
5 tablespoons vinegar
4 tablespoons olive oil
Long green leaves of choice (collards, romaine lettuce, or kale)
1. I combined the lemon/lime juice, orange juice, olive oil, vinegar, red onion, cilantro, pepper, basil and salt in a container and let it sit for a half hour.
2. I diced up the avocado, mango, tomato, red and green peppers, and garlic, put in one container, and then mixed it up.
3. Pick your favorite green leaf and spread it across and enjoy. You can also let it sit for a little while so the flavors can marinate nicely.
