This is amazing, not exactly the same consistancey as mashed potatoes, but it is really really good. This recipe is very simple, but I first saw it published in Matt Amsden's book RawVolution.

In a food processor, combine all of the ingredients, except the gravy, and process until the mixture looks fluffy, like conventional mashed potatoes.

is there any way to make the mashed potatoes with out the nuts? or is there a veggie that i could substitute instead?

Nice recipe. I _just_ made a different version from TheDailyRawCafe.com, but used: cashews, nutritional yeast, black pepper, a couple more garlic cloves, a bit of water, and I skipped the oil.

Regardless of which nuts you use or how you season it, whipped cauliflower is the new whipped potato.

I just made this recipe today (I also have the RAWvolution book) but I really didnt like it! I dont know if I put too much olive oil in it, or the bitterness of the cauliflower just didnt jive well with me... but bleh, I need to alter it so I dont waste the whole batch.
