2 cup red cabbage, shredded/sliced thin
2 tomatoes, diced
2 avocados, cubed
.66 cup my Mild Cashew Mayonaise
½ lime, juice
.125 teaspoon mustard powder
½ teaspoon salt, or to taste
½ teaspoon black pepper, or to taste
Put the shredded cabbage in a mixing bowl. Put the Mild Cashew Mayonaise on top, and add the lime juice, mustard powder, salt and pepper. Stir all together until the dressing is mixed and the cabbage is well coated, then stir in tomatoes and avocados. Enjoy!
This was so good I just had to post it right away! My son came up with the first name for it, and my dad the second. I just wanted to eat it all!!!!
