· 1 large English cucumber, thick or thinly sliced, leave skin on (thin slices will have more flavor)
· 1/2 of a medium or large onion, sliced (white onion will give it a little "heat")
· 1/2 cup raw unfiltered apple cider vinegar
· 1/4 cup water
· 1/3 cup sweetener (coconut sugar, agave, honey, or turbinado)
· 1 tsp dried dill
Throw all into a 32 oz mason jar and shake to mix. Let set overnight in the fridge. Give it another shake to mix one more time before your first taste.
As long as you do not eat out of the jar, you can "reuse" the ACV liquid for another batch.
Don't say I didn't warn you! You may find yourself making a batch every couple days and hiding it in the back of the fridge. ;)
