Recipe Directions

1. Add all ingredients in a bowl, starting with the Brazil nuts (you can soak them the night before, but make sure they are dried by the time you grind them).

2. Add the rest of the ingredients and place the mixture into paper baking cups and in a cupcake mold. It’s also nice to add some chopped pistachios to this recipe, it gives it a nice crunchy texture, but it’s optional.

3. Sprinkle some dried coconut on top for decoration.

4. Place it in the fridge or freezer, and within an hour (if put in the freezer) or two, this sweet treat should be ready to serve and enjoy.

This is one of the quickest and tastiest sweet treats that I have ever made.

I want to warn everyone that I am not good at following recipes or measurements. I like to just throw different ingredients in a bowl and let my taste buds decide if more or less is needed.

Wow, these are really good. I just tried them. The raisins add the perfect chewiness and all the flavors go together perfectly. I usually don't like carob desserts, so it's great to have found this one.

This looks really good. I just read how nutricious brazil nuts are and how the selenium has all kinds of incredible health benefits. I can't wait to make these and give them to friends!
