For open face sandwich:
1/2 medium zucchini cut into 1/4 slices
1 teaspoon ume paste (japanese pickled plum) spread on slices
2/3 very ripe avocado mashed lightly and put on slices
1/4 cup pumpkin seeds (sprinkled/embedded into avocado)
1 black radish (any radish will do but use black ones if you can get your hands on them) cut in big slivers and placed as top of sandwich
2 sheets of nori, cut into 4 strips per sheet
2 tablespoons apple cider vinegar utilized to make nori stick at the ends of the wrap
You should be able to see two sides of the sandwich but the top, bottom and other two sides are hidden by the nori
The ume is a key ingredient to add the salt flavor with no salt, plus it is very stimulating to the taste buds. If you don't have some, it is a very worthwhile investment.
