1 cup fresh tomato (chopped)
½ cup soaked pumpkin seeds (pepitas)
¼ cup yellow bell pepper (diced)
¼ cup sun-dried tomatoes (soaked)
1 small chipotle (smoked) pepper
1. Add all ingredients except the pepitas and bell pepper to a food processor and blend into a smooth sauce, adding soak water to achieve thick, saucy consistency.
2. Add pepitas and bell pepper and process to coarse, meaty texture.

I am posting this in response to sick of nuts and for all of us who refuse to spend half your budget on nuts only to gain nothing but bloated bellies and weight.
My daughter and I ate these before my wife could get home. It is really tasty and worth a try.
