1 cup ginger, shaved with vegetable peeler
1½ cup apple cider vinegar
Recipe Directions
Put ginger in the vinegar, in a jar with a tight-sealing lid. Soak for as long as you like, up to a year, in the refrigerator.

What's the minimum amount of time this can be left soaked before use??

This is simply delicious with some honey or agave.

I believe this can be use after a day of soaking, but definietly the longer the better!
