You wouldn’t believe how good raw potatoes could taste until you prepared them. These cakes are soft and fluffy on the inside and crispy on the outside with a buttery flavor. Enjoy and experiment with onions and herbs such as basil.

Recipe Directions

1. Using a grater, grate the potatoes over a bowl.

2. Mix the grated potatoes with the vinegar, and let it sit at room temperature for at least 12 hours. This is an important step as it removes the starches from the potato and concentrates the flavor. The final product doesn’t really have a vinegar flavor, but the vinegar adds a mild sweetness and flavor.

3. After 12 hours, drain the vinegar off (you can reserve it to soak more potatoes) and mix in the salt and olive oil (use more or less to suit your tastes).

4. Spread the potato mix in little 4-inch diameter cakes on mesh dehydrator sheets. Dry them for 1-3 hours until the cakes are soft in the middle and dry and crispy on the outside.

I think H20 would work just fine. I know, they look like hash browns and taste like them too..but they are the actual thing in the photo. I was going to post the chip recipe but then I looked at my grater and thought I could get an even better result with shreds, and it's true!

Yep, I'm 12. I've been mostly raw for many years with my mom. Thanks, I'm glad to post on here :)

This sounds delicious, yes, raw potatoes taste good. I'm going to soak mine in H2O first like I did when I made the chips, then soak them in lemon juice. Do you think it will have the same effect as far as texture?

These look like hash browns in the photo. Do you have a photo of them as patties? They sound good...WTI! (Will Try It!)

BTW are you really only 12? UR so intelligent. After reading a few of your posts, I thought rawkidchef was someone's parent that liked to cook a lot for children, because you speak like an adult at times. Thanks for your contributions to this forum ;-)
