2 optional zucchinis (chopped and peeled)
2 stalks of celery (chopped)
2 pickles (chopped)
1 teaspoon celery seed
1 teaspoon dry mustard
Salt and pepper
½ purple onion
½ vidalia or green onion

This is so yummy and refreshing! Non starchy!
Peeled and cubed jicama is the secret.
The optional part is if you decide to make this in advance.
The cubed zucchini only lasts a day so don’t put it in if you are making this for a family gathering the next day or if you want it to last a few days.
I am going to try it out on my family on Fathers Day and make the mayonnaise with Brazil nuts for added nutrition and health benefits.
