1 cup pumpkin (peeled, seeded, cubed)
½ cup raw pumpkin seeds
4 dates (pitted)
1 tablespoon extra virgin coconut oil (optional)
¼ teaspoon allspice
¼ teaspoon cinnamon
¼ teaspoon nutmeg (freshly grated)
1 teaspoon ginger root (freshly grated)
Pinch of salt
1½ cups water
1. Throw everything into a high speed blender, adding as much water as necessary.

This is my pumpkin pie replacement.
I created it with the pumpkin I had leftover from the fantastic “Pumpkin Curry” recipe from this site.
Everything is to taste, and I add the coconut oil to everything, so it’s not essential.
