YieldMakes 2 trays of bacon
1 eggplant, chopped into little bacon-sized strips
½ cup raw olive oil
½ cup red wine vinegar, raw
3 dash sea salt
1 dash black pepper (optional)
Marinate the eggplant strips in all the ingredients for 3 hours, and then dehydrate on teflex sheets overnight, and for another 4 hours. If you can’t wait, just do it overnight.
