YieldMakes 2 trays of bacon
1 eggplant (chopped into little bacon-sized strips)
½ cup raw olive oil
½ cup red wine vinegar
3 dashes of sea salt
Dash of black pepper (optional)
1. Marinate the eggplant strips in all the ingredients for 3 hours.
2. Dehydrate on teflex sheets overnight, and for another 4 hours. If you can’t wait, just do it overnight.
