Yield2 trays of bacon
1 eggplant (chopped into strips)
½ cup olive oil
½ cup red vinegar
3 dashes of sea salt
Dash of black pepper (optional)
1. Marinate the eggplant strips in all the ingredients for 3 hours. If you really want that smoked flavor, add a little liquid smoke.
2. Dehydrate on Teflex sheets overnight, and for another 4 hours. If you can’t wait, just do it overnight.
