Yield4-6 salad haters
2 cup carrots, blended
½ cup golden raisins
1 cup chopped bing cherries, pitted
1 organic orange zested, segmented
1 cup walnuts (optional)
2 tablespoon sherry (optional) Harveys Bristol Creme or amaretto
1 tablespoon agave or honey (optional)
1 teaspoon pumpkin pie spice or cinnamon or cloves
Blend carrots in blender till smooth. Pour into bowl. Add other ingredients. I put the oranges on top to make it decorative. I would have put walnuts on but I didn’t have any at the time.
This is better if you make it at least an hour ahead so the raisins can soak up some of the liquid and spices. I also thought it would be good with dried cherries or goji berries.

This is good for people you want to lure into eating better. I made this for my parents this weekend. My dad is not allowed to eat lettuce because he is on coumadin so I made a creative salad. Noone even took a bite until I said there was Harveys Bristol Creme in it and then they finished their bowls! This is optional of course.
