I came up with this easy, filling snack after a 6 mile hike on a camping trip in the Smokies this weekend. It works best if the avocado is a little soft on the outside and it really keeps the energy up!

Slice or cube the avocado. In a ziplock bag crush the nuts, I like cashew and macadamia best but any will do, even what you have in your trail mix! Add avocado, shake to coat and enjoy right out of the bag!

I do this all the time on hikes and rips to the hot springs. I mash the avocado with chopped brazil nuts and wrap in cabbage leaves. Fills the tummy right up.

My mouth is full of water after i read.There are two avos in my kitchen,I will get some cashews, I like the one with skin as it tastes so fresh.Will try for lunch.Its so easy to prepare too.
