PECAN PIE CRUST
1 cup pecans
1/3 cup dates
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of sea salt
3 thinly sliced apples (gala or whichever tickles your fancy)
Date paste (thinned)
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon lemon juice (to add a pleasant tartness and to keep the apples from browning)
1 tablespoon coconut oil
1. Toss apple slices with remaining ingredients until evenly coated.
2. In a food processor, blend pecans, salt, cinnamon, and nutmeg until crumbly. Add dates and blend until dough holds together.
3. Press base into a springform pan. Top with coated apple slices.
4. Let chill in fridge. Serve with vegan vanilla ice cream.
