Recipe Directions

Pulse cauliflower in food processor until it has a rice consistency and transfer to large bowl. In blender place olive oil, pine nuts, lemon zest, cinnamon, lemon juice, sea salt and spring onions and blend until creamy. Add this to the cauliflower and mix well. Add sun dried tomatoes, mint and raisins to the mixture and mix again.
I use romain lettuce leaves or any type of green to wrap this in. I didn’t have luck with the “vine leaves”. This mixture is good on anything. I have also used it on rawvolutions onion bread. YUM!!

This is one of the first recipes I made when I decided to try to incorporate raw foods in my diet. I didn't have any luck with the vine leaves and bought some, but didn't care for the taste. I used romaine lettuce leaves and it is delicious. I don't know how I did it, but I accidentally issued it three stars...it is well worth five in my opinion. Very tasty.
