2 cups lentils (soaked overnight)
1 cup tamari
3 tablespoons honey
1 cup white vinegar
1 teaspoon fresh ginger (grated)
1 tablespoon dark sesame oil
2 tablespoons water
1 clove garlic (chopped)
1 carrot (chopped)
1 pepper (chopped)
4 scallions (thinly sliced into rounds)
Sea salt (to taste)
1. Mix all ingredients together.
2. Place in refrigerator until all the flavors blend.
3. Stir occasionally to help coat well.

I’m not sure about white vinegar as a raw ingredient, so if you know of a substitute, feel free to use it.
The longer this sets, the better it tastes.
