4 cups beets (grated)
2 stalks celery (sliced)
1 apple (chopped)
¼ cup currants or raisins
¼ cup agave, honey, or date syrup
2 tablespoons apple cider vinegar
1 tablespoon walnut oil (any oil would work)
½ clove garlic (very finely minced ,or use garlic press)
Salt and pepper to taste
Walnuts (chopped; for topping)
1. Mix beets, celery, apple, and currants in a bowl.
2. Mix all other ingredients, except walnuts, in a jar and shake well to mix.
3. Pour dressing over salad.
4. Top with desired amount of chopped walnuts.

This is a very tasty and brilliantly colored salad.
The addition of walnuts makes it a meal!
I took the picture before the beets turned everything pink!
