YieldAbout 2 cups, serves 4-6
3 cup sweet potato or yam, peeled, chopped
4 clove garlic
¼ cup raw tahini
1 tablespoon olive oil
2 tablespoon lemon juice
1 tablespoon nama shoyu
¼ cup filtered water
1½ teaspoon sea salt
1½ teaspoon ground cumin
½ teaspoon cayenne pepper
¼ teaspoon ground coriander
Mix all ingredients in blender or food processor until smooth.
May garnish with fresh parsley.
