1 mango (peeled, diced)
1 tomato (diced)
½ avocado (diced)
¼ cup onion (finely diced)
¼ cup bell pepper (any color, finely diced)
Juice of ½ lemon
1 tablespoon apple cider vinegar
1 teaspoon garlic powder or 2 cloves (minced)
Salt to taste
Lettuce leaves (I used Boston, but romaine would work too!)
1. Mix all ingredients together in bowl.
2. Let marinate for a couple hours in the fridge.
3. Put a couple spoonfuls on the lettuce leaves and enjoy!
These sweet summery ingredients make for a perfect light lunch or dinner!
