SALSA: Put the 3 tomatoes, 1/4 of an onion, 1 clove of garlic, about a handful of fresh cilantro into a food processor. Chop to how thick or thin you like your salsa consistency. Add fresh squeezed lime juice, salt and pepper to your liking.

GUACAMOLE: Take the Avocado and remove it from the skin. Mash it in a bowl with a fork and add some cilantro, lime and salt or pepper if you would like.

TACO SHELLS: Rinse 4 large Romaine leaves and put them on a plate.

Now you can take your Guacamole and put it in the center of the Romaine leaf and top with salsa. Fold over the Romaine leaf like a taco and pick it up and eat it five minutes after you started making these yummy tacos!

*If your a big chips and salsa fan, cut up some jicama into thin 1/8” slices and use them as the chips and dip them into the salsa*

OK had to think about my last comment. It does not taste like the glass store bought salsa. More like freshly made store bought salsa. Out here in Colorado they have a great salsa made my Blue Moose...a company in Boulder. It is sooooo good.

I did an abreviated version tonight( i was missing some ingredients) but yum yum!!!!

I think it totally tastes like store bought salsa. We live in the South West and we usually eat a lot different types of salsa and this tastes as authentic as it gets. Personally, I think the salsa is the best on the second day after its been made. It gives the juices time to really release themselves. If you like the roasted flavor- try some sun dried tomatoes with it in the foodprocessor.

This looks good :) Like you said I would use it more for a quick snack, I have a more filling taco recipe that takes so long to prepare!

Also. Do you think its possible to ever make raw salsa taste like organic store bought salsa in those glass jars? I miss it :/
