There are plenty of fresh tomatoes to use up around here and plain raw tomatoes aren't a favorite. This is a good way to go through them.

Ah, but the agave isn't raw! My mother used to throw a whole carrot in her cooked sauce to sweeten it. When the sauce was done the cooked carrot was pulled out and a coveted treat among us kids. :)
