Ingredients
2 cups raw cashews (soaked for 6 hours)
1 cup soft dates
1 cup coconut meat
1 teaspoon vanilla
1 cup strawberries
1 cup blackberries
Dashes of coconut water as needed (just add small amounts)
Recipe Directions
1. Blend all of the ingredients in a food processor.
2. Transfer into a blender and blend until really creamy.
3. Place in a cake tin or small bowls and let them sit for a couple of hours.

By BreezybreeI don’t use a base for this cheesecake because I don’t tend to overdo it with the nuts, but you could easily make a base from another recipe.

Wild Strawberry Cheesecake
i think young coconut meat would be the best option for this. i made this tonight for dessert, and it was perfect except the blackberry seeds. if i had one suggestion for this recipe it would be to juice the blackberries instead of just blending them in whole. i think you would attain approximately the same results sans the nasty seeds.
