Florence Fennel & Strawberry Salad

To celebrate the onset of summer produce, I threw these few ingredients together for lunch today and it turned out great.

It just tastes like summer.

And because all the ingredients are really juicy, you don’t even need a dressing. I found it perfect just as is.

Vegetable Lo Mein/ Kung Wow Veggies

This is based on/inspired by Roshi's Kung Wow Veggies.

I am always in the mood for Chinese and ethnic flavors. It reminds me of lo mein I used to get at a Chinese place in Boston.

This took about 5 minutes or less and it's so yummy.

Spicy Fudgey Hearts

I love the cacao/spices combination.

I use spices not only for their lovely taste, but also for their medicinal properties: turmeric and black pepper help prevent cancer, ginger warms you up and gives you energy, cinnamon is antibacterial, cumin helps digestion.

For these lollipops, I used my regular raw fudge recipe.

I don't remember where it comes from exactly. It was inspired by many other recipes and modified over the time.

Any raw fudge would be great.

Cheezee Kale Chips

When my mom and I were at our local health food store, we saw these kale chips that were called "Quite Cheezee Kale Chips" and they were so expensive, but the best kale chips ever!

So I took off the ingredients, and sort of made up my own version of the one at the store, and it tastes very close to the one we bought, but a lot cheaper.

Basil "Cream" Sauce (AKA Creamy Pesto)

A creamy pesto sauce or for raw pastas, pizzas, wraps or a yummy veggie dip.

Roshi's Chai Cookie Cakes and Chai

With it being the dead of winter and all, I’ve been doing my best to stay warm during the cloudy rainy days.

This can be especially difficult if your diet consists of mostly raw foods, so it's good to supplement with foods and spices that having a warming tendency for the body.

The three C’s of warming spices are cinnamon (dalchini), cardamom (elichee), and clove (laung).

Coconut Rainbow Salad

Fresh daikon, bell peppers, spinach, cabbage, and carrots covered in coconut-chili-pineapple sauce and garnished with herbs, scallions, and fresh fruit.

I made this salad out of a bunch of produce I had sitting in the fridge--I really liked this combination but I am sure other veggies and/or fruits would be delicious as well!

Raw Fusion Coleslaw

This is coleslaw at its finest.

It is dairy-free, egg-free, sugar-free, and tasty! The dressing is also incredible.

The mayo is tangy, creamy and pure. Use it for making slaws, spread on wraps or sandwiches, or use it as a substitute for mayonnaise in recipes.

Use it as a mayo dressing substitute by adding more avocado to make it thicker.
