Recipe Directions

  • 1. Place cashews alone in your food processor and process until they become small and crumbly. You are making flour out of cashews!
  • 2. Add dates to the cashews and process again until the mixture sticks together and the dates are well processed.
  • 3. Add the remaining ingredients and process again until the mixture turns a lovely dark chocolatey brown. Stop processing before it gets too buttery. (There should still be air between the small bits so that you will be able to press them down into your pan.)
  • 4. Dump the mixture into a brownie dish or small cake pan and press down very firmly using your clean hands.
  • 5. Throw this raw almond pulp fudge recipe into the freezer for at least one hour. This fudge should always be kept in the freezer. Slice before eating and eat right out of the freezer. They won't turn rock-hard. They will be nice and chewy. Do not refrigerate or defrost.

This recipe is only for those of you who have leftover almond pulp from making almond milk in your blender. (If you do not have leftover almond pulp, then do not bother making this recipe! Make my regular raw brownie recipe instead.)

For an even more delightful fudgey dessert, ice the fudge with raw chocolate icing before freezing. (Not necessary though, still very good without the icing.)

I made them for the second time last night, and somehow they are even better this time around. I didn't think that was possible. The next time I make them, I may try them with the icing too. In which case, I will no doubt be huddled on my sofa, under a blanket, hiding from the world so I can eat them in peace and not even be tempted to share with anyone. (I gave some to my best friend today and he LOVED it.)

What's more ... it's so much fun to make. Honestly, I want to give this SIX stars out of five. ;-)

I made it too as I had almond pupl lefover from my blueberry almond milk milkshake today but made it into little balls :-) These are delicious and with 58 calories per ball, I have to go easy on them!

I made these last night and I can't stop eating them! They are delicious. Laura, you are God sent ;-) I am so happy I found you and I will have a great time going through and trying some of these out! I might need to invest in a dehydrator soon.....and a Vitamix! Already have an ok blender now that makes lovely almond milk (hence the almond pulp recipe). So exciting when I already have most, if not all the ingredients already!

Hi. I really want to make these brownies because I have had almond pulp sitting in my refrigerator for weeks; however, I am not sure if I can use it. How long can you store fresh almond pulp? I think I made the milk 3 weeks ago. I have no desire to make my family sick!

Next time, throw it in the freezer instead of the fridge :)

The first time I made these I fell in love. They are delicious! LaraBars ain't got nothin on these babies!!! That was a year ago and this is always my to go recipe whenever I make almond milk. So tasty.... will be making this again for sure.
tried in my trusty Blentec and it did an amazing job....you just need to know a few tricks first.
1. soak dates in hot water for 10 mins at least..... makes them soft to blend
2. choose Grind Grain option to make perfect cashew flour
3. Use chop option to combine it all....
4.....perfect!

Well, off to the store I go for a good food processor... The small cheap one I have & my Blendtec both laughed at me as I tried to force them to blend this! :) What I ended up with is pretty chunky, but still good. Thanks for a great idea for using the pulp.
