  • Simply assemble in a cereal bowl. You don't have to be exact with your measurements, but you should try to include the chopped apple since without the apple there isn't much to bulk up this recipe. Pour cashew milk on top and consume immediately.
  • This serves one. Sometimes I'll have two bowls (two servings) if I'm hungry :)

Good morning,

I am having this as a raw breakfast cereal recipe on the weekends these days. I tend to have green smoothies on weekdays when I am in a rush, and raw breakfast cereal on the weekends when I have more time for a treat. Although this recipe is super quick!

This raw breakfast cereal recipe reminds me a bit of Alpen or granola, but it's raw and quick to prepare as long as you have cashew milk in the fridge. I don't always have cashew milk on the go, but I made a big batch lately so I've been enjoying this raw breakfast cereal recipe while the cashew milk lasts.

And if I don't have cashew milk, sometimes I will just splash some water on this instead. It's certainly better with a nut milk - but water will do in a pinch. Especially if you are on the go and trying to get out the door in the morning!

Do you need to soak the buckwheat groats to soften them before adding to the cereal. They are pretty hard.

Hi! Great question! They are very hard, but they add a nice crunch when used sparingly in a recipe, like this :)

I'd say there is no need to soak in this recipe unless you have dentures or problems with chewing for some reason :) Also, if you find them a bit too hard, you can just let the finished meal sit for a few minutes, and they will soften after you add the mylk!

Can you grind the nuts and buckwheat? It seems a little weird to me to have them whole in a cereal. I would prefer to break them up a bit in a food processor or blender then serve with the fruit and milk.

Yes, you could absolutely grind them up! I use a clean coffee bean grinder to grind nuts - or you could just pulse them in a food processor to reduce them in size.

Do you soak your buckwheat groats? I can imagine breaking a tooth on those things, if I caught it just right in my teeth. I am starting a raw/vegan lifestyle and some things are quite new to me. Thanks!

Nope, no pre-soaking required. However, I usually wait about 5 minutes with the nutmilk in the bowl, and the groats soften quite a bit in just a few minutes with liquid. Also, it's not an entire bowl of groats - so the occasional crunchy bit is nice :)
