  • 1. Place all ingredients in your food processor.
  • 2. Pulse very briefly. Just pulse once and take a look!
  • 3. Continue to pulse briefly to get the a "chicken-salad" type consistency that is quite chunky, like the attached picture. Go slow!
  • 4. Consume immediately.

I like to use a crisp green Granny Smith apple or Gala apple in this recipe, but any apple will do. I use a medium-to-large apple.

Don't over-process, because it will look like the attached pic in just a quick pulse or two! So go slow.

This recipe does not keep well AT ALL. Just make it immediately before you want to eat it, and eat it all or force other people to help you eat it!

This makes a great side salad. It's a bit heavy for a whole meal, but I have eaten it as an entire meal on occasion.

Super good! I, too, added avocado and ate it with spicy mustard. Super yummy and very quick! Will make again. Oh, and I don't have a food processor so I chopped the cashews up first in a blender, took them out, then added everything else. It turned out nice. I served on top of chopped collard greens! I licked my bowl! :)

Going to try this for my first raw food potluck. I also have a 13 yr old who is wary of anything new and "raw." Hoping to turn her around with this salad. Very excited to find some new recipes and learn that going raw isn't boring!

Read 'a tablespoon of onion' as 'a whole onion'.... Let's just say after a few mouthfuls, our systems are clear!
We will definitely try it again with the correct quantities and let you know what we think then :-)

I'm a college student looking to eat more raw foods.. with a limited budget and materials, this recipe was perfect. I absolutely loved it. it was easy, and DELICIOUS. I thought I would have to go out of my way to go raw but this was easy to make on the go and I loved how much substance it had for so little calories. Thank you so much.
