  • 1. Place all ingredients in your food processor.
  • 2. Pulse very briefly. Just pulse once and take a look!
  • 3. Continue to pulse briefly to get the a "chicken-salad" type consistency that is quite chunky, like the attached picture. Go slow!
  • 4. Consume immediately.

I like to use a crisp green Granny Smith apple or Gala apple in this recipe, but any apple will do. I use a medium-to-large apple.

Don't over-process, because it will look like the attached pic in just a quick pulse or two! So go slow.

This recipe does not keep well AT ALL. Just make it immediately before you want to eat it, and eat it all or force other people to help you eat it!

This makes a great side salad. It's a bit heavy for a whole meal, but I have eaten it as an entire meal on occasion.

Ive been making this salad for a few months now and its quick, easy and includes ingredients that I would have in my pantry all the time (so there is no need to go out and buy ingredients especially for it). I whip it up for a meal on the run, rather than a side salad and I find it stores quite well for about 24 hours in the fridge if absolutely necessary. I'm not a whiz in the kitchen ... at all ... and the vast majority of your recipes are friendly for even an absolute novice like me. Thank you so much for the simplicity and nutritional value of your recipes!

This is so yummy! All I had on hand was a royal gala apple, but it was still delicious... I noticed that the apple in the picture looks like a granny smith. I will have to use a granny smith next time.
Also, I think that I will also add a clove of garlic... mmmm yummy!

I take photo's with my smartphone (Samsung S2) and then you can edit them to put them into a montage. If you have a smartphone, you should be able to do the same with some kind of photo editor application that either comes with the phone or you can find one to install for free.
I'm finding a lot of vegan/raw recipes require the use of nuts, however they're proving to be quite expensive for my budget. Do you have any hints/tips on how to go about buying nuts in bulk for cheap please? (or fresh herbs for that matter?)

Genius! I have an iPad and an Android phone and I need to use them more!

Re: nuts, I buy in bulk, nuts.com is pretty good depending on where you live (re: shipping)

Also, herbs, consider growing your own if you can!! I am a terrible gardening but I am focusing on herbs, especially chives, basil and mint.

Love this recipe, it is now a raw staple for me. I make it for the beach put it in flax bread or eat as a salad. Very easy to make and I always have the ingredients in my house

Melanie, it is a perfect beach food, isn't it! Throw in a little tupperware and it's ready to go. I love the beach. We live in a rural area of Canada with beautiful sandy beaches everywhere. So I am at the beach a lot in July and Aug :)
