Recipe Directions

  • 1. In a food processor, process nuts until they are very well blended, so that they look like chunky flour. Basically, you should just see little chunky bits of nuts.
  • 2. Then, add everything else to the food processor and continue blending. You'll probably want to add the ingredients one at a time otherwise your food processor might get all munged up.
  • 3. Keep on processing until your mixture looks like a big ball of dough, like you can see in the picture. There shouldn't be big chunks of anything. You will probably see small flecks of nuts though. Once you've got a giant raw chocolate cake dough ball, then the fun begins. You do not need to dehydrate this or anything, the cake is basically done now you just need to figure out the presentation (shape and icing or whatever you want).
  • 4. Just press the dough into the desired shape for whatever you want to make. For example, just take a nice cake plate and press the dough into a cake shape. Ice it using your favourite icing, like in the picture above.
  • 5. Refrigerate for at least 1 hour to allow the cake to firm up.

The Rawtarian's Thoughts

By The Rawtarian

Raw chocolate cake recipes are a dime a dozen. But this raw chocolate cake recipe is a perfect base for a simple, chocolate cake.

I think of this recipe as my base for being creative. I'll make up a batch of this raw chocolate cake recipe and then get creative by layering it with fruit, making cookies, or doing whatever I feel like.

This recipe does not have to be dehydrated. Just use your food processor and it's ready to go.

If you're looking for something sweet but don't want something as time consuming to make, try raw chocolate truffles instead. They taste rather similar.

You could also split the dough in half and press half of it into a cake shape, add some fruit or icing or whatever on top of the first half, then put the remainder of the raw chocolate cake recipe on top to make a layer cake effect.

I've heard that you can make an icing from avocados. :)

Yes, it's true. There are tons of great sweet recipes that use avocado for creaminess. :)

I don't know if it would work the same, but my FAVOURITE raw dessert is Chocolate Mousse:

1 avocado
1-2 tbsp raw cacao powder
1/2 tsp cinnamon
2-3 tbsp agave nectar
A dash of vanilla essence
Splash of water

Blend it up to the required consistency.

I thought I'd mention it, as MAYBE, if it were really thick (TINY splash of water! Or mash the mixture rather than blend) it may suit to put on the top of a cake. I might be wrong though! But if it doesn't work out, it's still yummy!

Have you tried blending a ripe avocado and mango together with cacao?!!! If not you should....no sweetener needed as mangoes are generally sooo deliciously sweet! This is my go to mock chocolate mousse!!! Let me know what you guys think!!!

Loads of love from Perth, Western Australia

No I have never tried that combo but it sounds DIVINE! It is hard to get a good mango here. Can I come visit and you can feed me some?

Australia is somewhere I definitely need to go. Like, now!

Love from Canada right back atcha! :)

Sarah,
While reading this post on Laura-Jane's raw chocolate cake, of which I can't wait to try, I came across your Avocado Mousse.
I just now ran to my kitchen and mashed up my Avocado & added the other organic ingredients and OMG! This is truly delicious and so quick to prepare.
I hope you don't mind me reposting your recipe to my website and I will be giving you full credit.
Thank you so much!

I haven't had much luck with raw icings, to be honest. I tend to dislike raw icing recipes that use bananas (even though I love bananas in general). Banana-based icings discolor and get kind of slimey after the first day, in my opinion.

I have a nice white icing recipe that I haven't tried yet that uses lecithin granules to make it fluffy. Once I make that, I'll review it. I don't tend to make many cakes because we are a small household and raw cakes are so dense.

we like to use a very simple raw chocolate mousse recipe we found- just avocado, cocoa, and either honey or agave for the sweetner. i dont have the exact recipe handy, but i just wing it anyway. enough avocados to ice whatever size cake yoiu have, add cocoa to make it dark, add sweetener to taste. easy, nicely spreadable and pipable with a pastry bag, tastes great. =)

Hi from Perth,Western Australia. Is the raw cocoa powder you use for this yummy recipe actually raw organic Cacao or regular cocoa?

Hi Helen,

Yes, I would recommend using raw organic cacao in this recipe. But if you don't have it at home, I'd just throw in the regular cocoa.

You could also use raw carob powder, but carob is not as flavourful as cocoa so you'd want to replace one part cocoa with 2-1/2 parts carob powder.
