1 cup of roughly chopped celery
1/4 cup cashews
1/2 garlic clove
3/4 cup water
1/2 to 3/4 teaspoon celtic sea salt
1/2 cup finely chopped celery (reserve - do not blend)
Directions
1. Add all of the raw cream of celery soup recipe ingredients (except the last 1/2 cup of celery) to your high-speed blender.
2. Blend in your high-speed blender. Start blending on low and work your way all the way up to high. Blend for a very long time so that the stringiness is blended and so that the soup recipe warms up nicely from the speed of your blender.
3. Place your 1/2 cup chopped celery into a bowl. Pour blended celery soup mixture on top of the chopped celery. Mix gently with a spoon.
4. Serve immediately. For an added touch, garnish with thinly sliced avocado.
This raw cream of celery soup recipe makes enough for one big bowl or two very small appetizer cups.
The Rawtarian's Thoughts
Raw cream of celery soup recipes, similar to my other soup recipes (raw tomato soup and raw corn chowder) are so darn simple and a great add-on to a somewhat smaller raw vegan lunch or dinner.
I like this raw cream of celery soup recipe when I want something light and creamy at the same time. Raw soups actually make great snacks, too (especially once you get the hang of making them, you can throw them together super quick, like, 5 mins!)!
I can't really think of any major tips to give you. Just make sure that you blend this recipe up for a very long time so that it gets very blended and so that it warms up, as well.
Because celery can be stringy you'll definitely want to make sure that you use a high-speed blender for this raw celery soup concoction.
Cream of celery soup is close to my heart because apparently my mom ate nothing but cream of celery soup when she was pregnant with me!

Hi Nelly, a food processor doesn't work for super smooth stuff like smoothies or soups.
Even if you can't afford a VM, you should definitely pick up a blender.
Food processor = for dryer things (nut pate, brownie batter, pie crust, etc)
Blender = for liquidy things (soups, icing, smoothie, sauce)

I would just love to have these for lunch, but it wouldn't be practical to lug my Vitamix to work everyday or leave it there and I'd have to make it at home and take it with me. Any suggestions for warming up the soup at lunchtime and keeping it raw? Thanks. Great site!

Hi Topher! No, that does not sound very practical! Especially since VMs are so gosh-darn huge! If your lunchroom has a stove you could warm it up very briefly on the stove at low temp just to take the cold edge off. Also, you could make it in advance and then bring it in one of those magic bullet style mini travel blenders to give it a whizz to warm it up slightly too.
I don't really bring soups with me for this very reason.

So I made this soup with a mix of celery and cauliflower (both needed to be eaten). The cauliflower gets an almost froth-like when blended and also makes it more filling. As the taste is sweeter I added some nut granola (a nut cracker experience gone wonderfully wrong) and a few olives to make it a bit saltier.

This is really interesting! I don't know that I've ever had cream of celery soup before, so I didn't know what to expect. This is so fresh and light. Can't wait to try your other soup recipes. It's a good way to use up veggies that are about to go bad. Thanks!

I've just made this for lunch. Very easy and quick to make (I like!) but I found it too garlicky for my taste (even though there was the tiniest smidge in there). Either my celery is not flavoursome (it is organic though) or my garlic is super-strong! Or, of course, it could be because I'm not a huge fan of garlic. Next time I'll try it without garlic.

Hi Sarah,
Glad you found it easy and quick!
If you prefer, in most of my recipes you can omit the garlic since it is only really there for flavour.

Love this. It's the first raw recipe I've tried and it's delicious. I threw some coriander/ cilantro into mine and it really compliments it well. I did have to chew on some parsley afterwards to neutralize the garlic. Don't want to repel everyone! A real winner though, can't wait to try your other recipes.

I'm wondering if this can be served slightly warm?

Sometimes you can let it blend for a long time and the friction will heat up the soup
