I made dehydrated carrot cake style crackers then added your cream cheese icing and redehydrated the crackers. They turned out great! My husband liked them so much that he ate an entire tray full. So I guess I'll have to hide them and ration them out to him LOL! Thanks for the great recipe and I can't wait to try the chocolate cream cheese.

Hi! Made your non-dehydrated carrot cake, and was about to make the frosting - are the cashews soaked first? I have a vitamix, so they shouldn't be a problem, but just wondering. Thanks!

This was absolutely amazing! I used it on a "regular" vegan carrot cake - amazing! I couldn't stop myself from licking the Vita Mix, haha.

I love all of your recipes. I am happy to say that as of October 5, 2012 that I have gone completely raw. I am confident that I can now hang in there for life after finding this site. Thanks for the wonderful insight and great recipes. What is the best food dehydrator and food processor to purchase in making such delicious recipes?

Just came across your site. My 11 month old was just diagnosed with a Milk and Dairy allergy so I am new to all of this. Looking to learn how to change over some of my dairy recipes to vegan.

Maybe 1.5 cups? Not enough to ice a normal, large huge cake. You might want to double or triple if trying to use like a Standard American Diet icing

So so delicious. I just made this for the first time and it was so fast, simple and delicious. I just made some regular carrot cake for my kids (with out eggs because I found out I'm allergic to eggs and dairy) and wanted to have one so I made this icing for myself. My whole family wants this on their cupcakes instead of store bought frosting. Yeah for me. :)

I believe it works with pine nuts - I once used half'n'half pine nuts and cashews, and it worked out marvelous.
